too hot for oatmeal in the summer? try this amazing, cold version
of oatmeal and a traditional breakfast staple.
this is a version of muesli, from switzerland, made vegan.
2 c raw steel cut oats
4 c water
¾ c dried fruit
1 c red grapes
1 c blueberries
1 c raw nuts
8 oz vegan yogurt
3 T maple syrup
¾ t salt
1 t cinnamon
a few springs of mint
medium bowl. large bowl. colander. rubber spatula. cutting
board. sharp knife. plastic wrap.
rinse raw oats in colander under cold running water. place
rinsed oats in medium bowl and cover with 4 cups of water. cover this bowl with
plastic and soak the oats overnight.
the next day, rinse soaked oats in colander again. transfer
oats to the large bowl.
wash all fruit. juice lemon and pour liquid into the large
bowl with oats.
shred apples and immediately combine with lemon and oats in
the large bowl. mix well.
cut grapes in half and dice banana for oatmeal. chop raw
combine all fresh and dried fruit in the large bowl along
with maple syrup, yogurt, salt and cinnamon.
serve chilled and garnish with mint. oatmeal can be stored in a sealed container
up to 5 days.
